Mt Barker Free Range Chicken on a Stick

Makes 10 - 12 generous sticks

 

- 1kg: Free Range Chicken skinless thigh fillets
- Kebab sticks (wooden or meted)

- Marinade

- 50ml soy sauce

- 1 tablespoon fish sauce
- 1 teaspoon sesame oil

- 1 small fresh chilli deseeded and finely chopped
- 1 tablespoon finely grated ginger

- 2 tablespoons honey

 

- Cut the chicken into medium sized pieces and thread evenly onto skewers (about 5-6 pieces per skewer),

 

- Combine all marinade ingredients. pour over chicken and leave to marinate for at least 30 minutes.

 

- Fire up the barbecue. place skewers ona hex grill and cook for 2_3 minutes on each side or until cooked through.

 

- Serve hot with stearned rice or salad.

 

- Also great served cold the next clay.
